Take your serving cup and measure a cup and a half of water to the ibrik. If you are making two servings, pour in three cups of water.
Add one heaped tablespoon of the extra-fine coffee per serving. Add the sugar you require (for example, between one and two teaspoons for an "orta" request). Ensure you stir the mixture well.
Carefully place the coffee pot on the stove and gradually let it simmer on medium heat. For two servings, it will need between three and four minutes to heat. Don't bring it to the boil. While the coffee is heating, watch it closely as a dark foam will quickly form. This foam will spill over if you're not careful, which will cause a big mess.
When the foam has reached the rim of the ibrik, remove the foam and place it in the cups with a teaspoon. Then carefully put the coffee pot back on the stove.
As the coffee heats again, more foam will form. Take the coffee pot from the heat and pour the coffee into the cups.
Deliver your coffee in the traditional Turkish coffee cups alongside a cup of cold water and some chocolate, Turkish delight, or other desserts or candies.
